Probably a 4×5" View Camera with full camera tilts and swings.

Deardorff
Arca Swiss
Cambo
Linhof
Calumet
Wista

If you plan on doing it professionally you may want to consider the Linhof or the Arca Swiss. They are built to last for a lifetime of pro use.

So far, its unanimous – a view camera. 4×5 is the most convenient, but if you have lots of money to play with and some way to schlep heavy equipment, using an even larger camera would be fun.

Well, or you could go bigger than a 4×5! But definitely a large format, the tilt and swing motions that control your angles and perspectives are the only way to go with architectural photography. You need all your lines to be straight! :)

Architectural photographers can choose from three main categories of digital cameras:
-View cameras (technical cameras) with medium format digital backs
-Medium format cameras with digital backs
-High end DSLR’s such as the Nikon D3x 24.5MP FX Digital SLR

    and Canon1Ds MII

You could also get a perspective control (tilt/shift) lens for an SLR.
I think a 4×5 would be better though.

I loved my Super Cambo 4×5 view camera with a bag bellows and the 90mm .. still have the huge tripod but sold the camera after it was no longer making me money.
